Penne alla vodka

This recipe is ridiculously simple and quick, but has a more subtle and complex taste than it has any right to. The vodka takes the place of herbs in the sauce and the result, while not quite exciting, is a very good payoff for the effort. This one isn't on the Taste website yet, but Taste does have a very similar recipe.

Dishes: few

I show here the amount to serve 4, rather than 8-10 as in the original recipe. Start diced onion and garlic:

Brown the onion, then add tinned tomatoes and pepper:

Simmer until reduced:

Meanwhile, cook the pasta, and stir through the butter and vodka:

Stir in the sauce and serve with parmesan (as shown at the top) or bacon (as below):
